What should I learn to make next? I've been on a pastry kick lately.

Danishes, from scratch


I've done apple fritter donuts (my favorite so far) regular raised donuts, croissants
and biscuits. It's snowy and cold outside, and I'm bored.

I'll make the dough today and bake them for dinner tomorrow. Maybe a double batch to make some cinnamon pull aparts in the morning too. hmmm...

they're also creme Anglaise and sugar glaze. Make them fancy with stripes of melted semisweet chocolate poured in stripes on top, drag a knife through the stripes for a bakery shop pattern.

Cream puffs are also fun, pate de choux made on the stovetop, cooled, and put into a baggie with a corner clipped off to make a poor man's pastry bag. Turn these into round puffs or make them oblong to turn into eclairs with whipped cream filling and a chocolate glaze.

I love the filled with pesto mixed with cream cheese or even as smoked salmon mousse...

Of course when all else fails you can always just use Ice cream

Love them and my grandmother used to make them often. I've yet to try to do it myself...Hmmm...maybe this weekend!

I've always said that and choux paste are two must-knows for any well-rounded cook, savory or pastry. And they're both such simple recipes, once you've made them a couple times you can do it from memory!
