Foodie Road Trip! Puerto Vallarta, Mexico to Belize and back.

We are taking a road trip starting next week. One of the great things about this huge country is that every region has it's own way of preparing foods, even though the ingredients stay somewhat constant.

I have tried to pick out the best of the regional places to eat on the trip, but would love any input from other DU foodies who may have been to some of these places.

We will also have kitchen facilities in many of the places we are staying, so making some things at home is also a possibility.
