The Bombay Masala Sandwich

This thing is wonderful.

Parboil 1 (small) potato and 1 (small) beet per sandwich (tubers are much smaller on the subcontinent, so vary as necessary). Peel the beet but not the potato.

If available, coat the inside of the bread slices with a mint/coriander chutney. If not, food-process mint leaves, cilantro, and a little oil (or just chop them) and coat the inside of the bread slices with that. Coat the outside of the bread slices with ghee or, if that's not available, butter.

Slice them both crosswise, very thinly, to produce medallions. Also slice about half of a green pepper and half of a raw, peeled red onion, and place all the slices inside the sandwich. Add salt, pepper, and celery salt.

The sandwich being assembled, cook it on a press until browned.
