Roasted Tomatoes and Broccoli with Pasta

I made a "pasta" dish with shirataki noodles. Am I happy with the "pasta" and the recipe?



Shirataki noodles/pasta are made from tofu and do not give the glycemic level rise that wheat does. In fact, look at this food label!



How terrific is that!?

This is so helpful for people who are borderline diabetes or who just want to keep their glycemic level low for weight purposes.

I roasted my broccoli, which, btw, is an easy, fast way to enjoy broccoli. Just slice, mix with garlic slices and olive oil, and roast in a convection oven for only 10" ! Fabulous treat.

Mixed my noodles (without cooking) with roasted tomatoes, vegetable broth, and parmesan. So easy.

This dish isn't easy if you don't have roasted tomatoes around, though. Do those in advance. I always have roasted tomatoes around, so it was no biggie for me.

I noticed no difference in the taste of the shirataki noodle and a regular pasta noodle.

YAY! PASTA'S BACK!!!

I sautee the onions until the are about half way to carmelizing, then add in the chicken cut into chunks. If I left them as tenderloins, and cooked the onions slightly less, do you think it could all come together at the same time - meaning chicken isn't burned and the onions aren't burned. I usually do it on about medium high.

P.S. Oh hell yeah, pasta is BACK for you ! Damn, and lots of iron, which I have need of. Where did you get them?

with mushroom risotto and roasted butternut squash. Maybe some steamed broccoli with lemon, too.

One of those formed 'ham' things in the crock pot, should end up being several meals. Housemate is doing it, so there's probably some other sauce in there as well, perhaps teriyaki.

It was my first try at pasta and it turned out pretty darn ok!

I need to get it thinner and I think the only way I can do that is with a pasta maker.
