my wife is a teacher (1st grade)
the parents of one of her students
gave us a plastic garbage bag full of
Pecans. so we have been shelling Pecans
for the last 4 hours. Have put a dent in the bag.
and I am done for a while. this weekend will finish
it up.

(9,839 posts)used to say that nuts needed to be "seasoned." He would let them sit in the shell for a month or so before shelling them. If they were this year's crop and shelled, they also needed to sit for a couple weeks at least before using them. I remember when we lived in mid-Georgia and had pecan trees in the backyard, the first nuts that fell off the trees were somewhat bitter and tasted too green.
My daughter always sends Northwestern shelled walnuts and hazelnuts every Christmas. We usually put them in the freezer, but sometimes they taste a bit "green" so we toast them before using.
Would love to hear from someone who has expertise on this subject.
