Neat twist on a pasta dish.

Coarse chopped whole kale stalks, slathered well with lemon juice, set aside.

Sautéed garlic in olive oil 'till just tender. Added salt and pepper to the saute. Added water for the pasta.

At the boil, tossed in the rotini. Two thirds of the way to "done", added the lemon / kale mix.

When done, drained the pasta & kale mix, returned to the pot and topped with just a bit of red sauce. Turned it all together.

Lick the plate good.

(ed to add) Next time I go this route, think I'll add something savory. Nutmeg, cinnamon, clove or such.

and mushrooms. The standard Mongolian beef recipe, but I like to add more veggies. And mega dried red chili pods.

Served over rice. Yum! Tri-tip was on sale, so I'm slicing it very thin, marinating in soy and sherry right now.

It's one of my favorites, always looking for ideas.

Worked for a while in a family Chinese restaurant in DC. Much of the "standards", i.e. Cantonese, with a good selection of Mandarin dishes. And our head chef was Mongolian. He made some amazing plates.

I marinated the beef in sherry, soy, corn starch and oil - for about an hour.

Sauce: Hoisin, oyster and soy sauces (about 3T each). A teaspoon each of prepared garlic and ginger. And, a few shots of sesame oil, if that's your thing. You can even add some chili-garlic sauce here too.

Wok: 10 chilis arboles, broken in 1/2 to let the seeds out and into the wok. 1/2 a small onion, diced, and a few mushrooms, sliced. Throw in your fave wok oil (mine is House of Tsang). Heat on high. Add the marinated meat, continue stir frying. (Here, I add the whites of the green onions if they are particularly thick.)

Add (defrosted or pre-steamed) broccoli, and stir in. Add the sauce, stir in, add 3-5 sliced green onions. Stir again, Batta-bing!

Serve over rice.

Stuffed peppers sans the peppers. One of our simplest recipes, and I still fumbled it, but I think I'm starting to regain some mental clarity.

The emotional pain is still raw, but I know there was nothing else we could do, given that his body was shutting down. Happily, his companion seems in reasonably good health, although she's only a year shy of a normal beagle lifespan herself.

...is that it is definitely worse if you wait too long, and the animal suffers. Then you have guilt along with grieving. It's sometimes hard to know that right time. Sounds to me like you gave him the gift of peace, when it counted.

Be aware that you might get a message from him that he's ok. I've had it happen with five animals who have crossed over.

I know how miserable this can be. Things will get better, and a lot of people are concerned for you.

I've finished the first of the two bags of waxed beans I bought in Dec, and we're on to bag two!

We've got sauteed wax beans and eggplant parm.

as I have to have a medical test tomorrow. But I sincerely hope you are comforted by meals with your friends, EB, and your other beagle as you deal with the sad loss of your dear pet.

I had tests, too. But they just told me no food after midnight. No coffee, tea, nuthin' before the needle.

Took all morning to get that done. Ridiculous.

mixed together some cream cheese and green chilis and slapped a layer of that on the sandwich. i may have to make a microwave mug cake later.
