how long are matchstick carrots safe to eat?

The kind you buy in plastic at the supermarket, already cut up, once you open the package and refrigerate them?

1. I would think the same as any other carrots.

Maybe add some water to the package (or put them in a resealable container) so they don't dehydrate

All of the bagged carrots I buy are dated.

My rule is if it doesn't give you a signal that it's bad, it's probably good.
