Son is doing his first culinary internship in California.

This is an amazing opportunity for a 19 year old who desires to become a fine Chef. He attends New England Culinary Institute in Vermont.

The Chef is very much a dynamic teacher of the French Culinary style using, local, sustainable ingredients. He will work this intern to his limit...that's a good thing.

It's a 6 month internship.

My son wants to as well but he may not find time. His assignment keeps him busy...plus, seeing the sites in California are enticing. He's been to Hollywood, Malibu and can golf, swim or ride horses free at a resort.
He said everyone there is sooo nice..even the birds are nice...

Southern California can be a blast, particularly if he is in a place where he can do lots of things for free.

He does not have a car....but...a girl in his class is doing her internship in Big Sir. She has a car and her assignment only lets her work 2 day! What a drag! So, she drives over to his location and they go out doing fun activities. This kid has all the luck!

The life to a chef is very, very hard but can be, imo, one of the most rewarding careers there can be.

I hope my son gets a chance too. The mentor Chef is giving him assignments to read as well as kitchen tasks. He broke down a case of squabs today in 30 minutes. Cooked Santa Monica spot prawns yesterday....made Ahi tuna dishes....So, I will have to try and nag him to watch the movie. He only gets one day off!

15. Congrats! I trained at a Southern California bistro in Tustin

So much great fresh food available all the time and so many cuisines, especially asian ones like Thai, Japanese and Vietnamese, have great presence in LA. Lots of Fusion and Spa cuisine.

I had worked in fast food and wanted to be a waiter at this new place but they talked me into cooking by offering me more money plus tips. An open kitchen before they were cool, provided a great work environment and helped us team better with FOH. No yelling allowed (unlike that Scottish guy's TV shows). They gave me about $30K worth of training so I had to commit to stay for one year. This was a restaurant opening so they had a team of trainers in-house that drove us like sled dogs for the first 8 weeks or so. That was tough to take for a 17YO that wasn't used to that much attention and criticism. Kind of like the marine corps except with fire and knives. When the training was over and the restaurant got busy, me and 2 other cooks would send out 300 to 700 dinners per night. The hotter the weather the busier we would get.

If he has any interest in the ocean, there are great day trips to the Channel Islands or Catalina and you see tons of marine life this time of year -- whales go to Baja to calf, huge schools of dolphin are right in the channel. Catalina has a submarine that will take you under water to the reefs and kelp forests.

It really is like that film -- teaming with wildlife. On the Ventura to Anacappa cruise we saw 2 schools of dolphin, both about 500 strong. Also 3 killer whales attacking a grey and her calf, not the happiest site but that's nature.
