What's for Dinner, Fri., May 1, 2015

I have two NY strip steaks, which I intend to do with black peppercorns. I think I'll just do a very slow pan fry, since I have too much other stuff to do to start the grill. I would prefer the grill, but...

I also have two new steak sauces to go on them: smoky black pepper and sweet chili garlic.

To go with, I'm making this thing called a "rosti." This one is an Indian spiced, made with garnet yams, cilantro, scallion, cumin, etc.

For dessert, red and green grapes.

I wanted all three, so I'm putting them into the cast iron pan and make a one-pan dish, with an alfredo sauce.

eye round roast, coated in salt and wrapped in plastic in the fridge for 24 hrs, patted dry, rubbed with olive oil then peppered, seared in a skillet, then onto a rack in a pan for 2.5 hrs at 225F, then turn off the oven without opening and leave in for another hour.

Got rave reviews, meltingly tender. Yay for Cook's Illustrated.

We are going down to a little festival in the town and I'm pretty sure they are going to have lots of street food.

Things I want - corn tamales, empanadas, carnitas and some very fresh fruit juice.

cooked salmon, crumbled bacon, swiss cheese, sauteed asparagus, green onions, sherry, nutmeg. If it's too bland add a chopped pepper and chopped onion.

i just cobbled it together with what i had on hand. leeks, red and yellow onions, red and orange bell peppers, garlic, a can of san marzano and white wine.

it turned out really well.
