I made this for the wife today, along with rib eye steaks. It can be an appetizer with chips, or be eaten as a salad, like we did. I also made some avocado tomatillo salsa for an appetizer, and will start another thread if there is interest.
Ingredients
2 (15-ounce) cans black-eyed peas, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
2 (15-ounce) cans yellow corn, drained
1 red bell pepper, cored, seeded, and finely chopped
1 green bell pepper, cored, seeded and finely chopped
1 small red onion, finely chopped
2 stalks celery, finely chopped
2 roma tomatoes, finely chopped
2 jalapeno peppers, seeded and finely chopped
⅓ cup chopped cilantro leaves
½ cup red wine vinegar
2 teaspoons sugar
3 clove of garlic
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup vegetable oil
Instructions
Combine black-eyed peas, black beans, corn, red bell pepper, red onion, celery, tomatoes, jalapenos, and cilantro in a large bowl.
In a blender, mix together vinegar, sugar, garlic , salt, pepper, and vegetable oil.
Pour dressing over black-eyed pea mixture and toss to coat. Refrigerate for at least several hours.

(34,582 posts)It will not be the last. It taste great, and isn't too bad for your. Next time I will make the black beans and black eyed peas from dry beans- canned food has to much salt. I am more of a pepper guy.

(9,808 posts)of the recipe is much the same but with lime juice in place of vinegar. We often add avocado slices on top and eat for lunch with blue corn chips.
