I found it. The best recipe for beets. You gotta try this - Indian Spiced roasted beets

We've made it twice now - our own beets are coming in, so we will keep making it. The flavors are complex, intense - and it is quite hot (which you can adjust with the hot pepper type you use, or removing seeds).

If you find beets too sickeningly sweet, or just don't think you care for them - give this a try.

The bulk of capsaicin is in the septum. The seeds, not so much. Cut the stem end off, slice it open down the length of the pepper and pretend you are filleting a fish. Leave the guts behind and you have removed much of the heat, use only the flesh of the pepper.

I don't like beets because they are overpoweringly sweet, but a huge dose of heat would likely do them some good.

I'm not in a huge rush to try them, though

1 c. each water, brown sugar, and apple cider vinegar
1/2 tsp. each allspice, cinnamon, and cloves
8 med. beets, cooked, peeled, and sliced

Cook sugar, water, and vinegar to boiling. Add spices. Add beets; cool. Store in refrigerator overnight.

This is the closest recipe I could find for the beets that were served as an appetizer at the Christmas Tree Restaurant in AZ. It was always Christmas in there and a great place to celebrate whatever. I could never eat beets as they came right back up, but these were wonderful. I searched online for years trying to find their recipe, which is a closely guarded family secret, but this came close enough. I could eat these. Still do.

YMMV, of course.
