I was going to roast a chicken but forgot I have a late-afternoon appointment, so I'll save the chicken for tomorrow.

and roasted tomatoes. I have around five containers of those little gold cherry tomatoes, so I'll mix up the herbs, olive oil, and garlic, and slow-roast them for a few hours. Ummmm, "tomato candy."

I made bean soup the other day, and after the first serving, I could see I hadn't put in enough beans. I want to thank Japple for this suggestion, which came awhile back, but I just tried it now.

As I was driving home from class, I was thinking that what the bean soup really needed was a "buttery" taste. But, of course, I didn't want to add butter. Then I recalled Japple telling about these speckled butter beans. I had gone to the store and bought some. I thought, hmmm, butter beans--sounds like just the ticket!

So I added them to the rest of the soup, and they were fantastic. I will make bean soup with speckled butter beans from now on.

It's on our regular rotation. And I have two pounds of lovely green tomatoes and will throw a couple of those in the pot. The rest of those are going in some dill brine. There finally is a vendor at the farmers market that is selling green tomatoes! I've been begging for them for five years now.


On edit, someone asked for my soup ingredients

Leftover chicken, chunked
15 oz can chopped tomaotes
4-5 cups chicken broth (I often use bouillon cubes and water)
1/2 bottle green salsa (usually Herdez brand)
1 tsp chili powder
a few red or green tomatoes
2 T ground cumin
1/2 cup diced onion
1 cup fresh or frozen corn

Simmer all of that for about half an hour, then add a handful of cornmeal or masa and stir in. Simmer ten more minutes, then tear up about four corn tortillas and drop them in (they turn into luscious little dumplings).

Serve with avocado chunks, a plop of sour cream, and either tortilla chips or strips of corn tortillas that have been fried crisp in oil in a pan.

Margherita for my bride.
I had a cheese pizza with jalapenos and basil.
Use the Trader Joe's 4 cheese blend (no mozz) and it was very tasty.
