Squash curry

Ingredients
1 butternut squash, pealed, seeded and chopped into 1-inch chunks
1 onion, chopped
3-4 T olive oil
4-5 T curry powder or garam masala

Directions
Mix all the ingredients in a Dutch oven and bake covered, for 45 minutes, stirring once. Serve hot. That's all folks!

or other liquid and it makes a great soup! I love curry + squash.

4. I used this idea to make pork chops with squash

4 bone in pork chops (cut 1/2" thick)
1 medium size butternut squash, peeled, seeded and chopped into 1" chunks
1 onion, chopped
Home made curry powder
garam masala

Season the pork chops with garam masala, put in bottom of the crock pot. Cover with the squash, then the onion. Sprinkle liberally with curry powder. Cook on HIGH for 90 minutes until pork chops are done.

I served the pork and squash with fresh green beans. I use my home made curry powder since the pre-made ones are far too peppery for me. I'm going to have to start making my own garam masala.
