What's for Dinner, Mon., May 2, 2016

I prepped all the ingredients for stir fry asparagus with chicken breast, toasted walnuts, and ginger.

When I get home late tonight, it should be a snap to pull it together.

Since Haagen Daz was on sale, I have some of that for tonight, too!

For years, I made my own chicken pie. Discovered Blake's a few years ago. Will never go back. I even remove it from the aluminum container and place it in a cast iron pan. ((less cooking time).

I hope this is available in your area. You will be pleased. Blake's makes other things too. The store (Market Basket) in my town carries only the chicken and turkey pies. Blake's makes other things too. Small New Hampshire company. Great food!

brown rice, zoodles, and broccoli, with a glass or two of some special wine we picked up at Disney at Xmas.

Hubby and I went out to her favorite bakery at lunch and bought her a very small (6" decorated yellow cake) and 4 chocolate ganache/raspberry mini petit fours. We're doing low carb in our house since I was diagnosed diabetic in January, but we're splurging tonight.

and black beans and rice. CinC House (who lived in Miami for 10 years) calls it Cuban chicken
