What's for Dinner, Wed., May 4, 2016

Pizza with caramelized onion, garlic, spinach, and tomato sauce. The tomato sauce is bolognese, so it has ground beef in it. TJ's pizza crust.

Tossed salad with chopped vegetables and 1000 Island dressing.

1. Blake's Chicken Pie (again). Green salad made w/ escarole.

When I find a product I like and can not make it any better, I stick to than one. The Blake's pies are great. To me, the salad w/escarole is better than other greens. Not only more nutritious but I love the texture. I use escarole for a lot of recipe's but it can stand alone as a salad. Lots of people don't like the slightly bitter flavor but I do. Iceberg is useless and green leaf, especially what I can buy in my area looks dead after a day in the refrig. My salad dressing is always. Oil, red wive vinegar, kosher salt or celery salt. Maybe a little finely diced Vadalia onion.

I don't eat dessert except when it is strawberry season. My menu does not compare with that of you great cooks. I used to cook for my family and was creative. When you are an old timer and alone, cooking habits change. Not always for the better but.......

Baked chicken with a spicy breading, Mexican rice and pinto beans. Garnished with onions, cilantro, pico de gallo. Oh, and jalapenos in the beans.

I was going to make a mango-black bean-avocado salsa, but both the mango and avo are not ripe yet. Maybe in a couple of days... That's what happens when I go on the first day of a grocery sale! Couldn't resist, though. Avos were 6 for a buck, mangos were 3 for a buck.
