What's for Dinner, Tues., May 10, 2016

Pasta with some kinda' sauce the RG made. It has vegetables in it which are white and also what looks like carrots. I tasted it and it decided to put in some chicken sausages to make it a little heartier, and it's going to be quite delicious. The cut of pasta I'm using is rigatoni.

I also made up a big tossed salad with avocado and roasted cherry tomatoes. Cuke, scallion, etc.

We had an end-of-class party last night. We had pizza, and best of all, empanadas that my students brought!

Drumstick and thigh, been brining since this morning. With steamed green beans, mashed spuds (and gravy from the drippings), and cranberry sauce I made using dried cranberries.

Wait - what month is this again...?

along with the leftover pesto and onion pizza we made yesterday, but we didn't have any croutons so decided to fry up a stale tortilla cut into thin strips as a substitute. Then when I went to make the dressing I found we were out of eggs, so I ended up using some of the avocados the squirrels left me this year to whip up an avocado/basil dressing, since Caesar salads supposedly originated in Tijuana. Not what was planned, but it saved a trip to the store - and came out pretty good.
