I'm thinking about using pounded, boneless chicken thighs, and putting it on sandwiches. I could probably even cook the chicken in a pan, or on the grill that way, instead of in the oven.

I have already tried my hand at making Indian curry, doing Chicken Tikka Masala, and pork Vindaloo so far, as well as going to the local Thai place for their version of curry (I have had the green, mango, and Masaman varieties so far). I love the flavors and the heat.
