What's for Dinner, Tues., May 17, 2016

Cauliflower soup. Very light tonight, as our university had its annual picnic.

Yes, I had too much fried chicken, a hamburger, cornbread, macaroni and cheese, and grilled vegetables. And that was only a fraction of what they had. After grading papers for days, it was so nice to just sit outside with my colleagues and enjoy the nice temperature. It was overcast, but I don't like sitting in the sun, anyway. Very relaxing time.

Well, anyway, I started on this soup early this a.m., so time to finish it.

temps are cool. Hope you can get in a few days of intense relaxation, gardening, cooking.

We are now eating the Sunday leftovers of grilled chicken with peppers & onions & zucchini. I am also making stir fried curried cabbage. Green beans on the side.

2. Lamb gyros

Lamb has been marinating in olive oil, garlic, oregano and lemon. In a pita with lettuce, tomato and onion. I made the tzatziki sauce yesterday (yogurt, cuke, mint, garlic and a splash of red wine vinegar).

This morning I had some time, and made spinach-pepperoni bread, just for snacking. It came out very well!

Pretty good dinner- according to the husband clean-plate authority, "Baby, it hit all the spots. Good job.".
