What's for Dinner, Thurs., May 26,2016

Pasta with lamb-tomato sauce. Has mint over it.

Zucchini rounds dipped in panko and sauteed. Has horseradish-sour cream sauce to go with.

Fresh greens from the garden to make a salad.

Dessert: vanilla cheesecake.

You're right. There is nothing like it and I always wait impatiently for it every year! Here's to fresh veggies straight from the garden.

ETA: going to have to try that zucchini rounds with panko. Are they baked or fried? We expect to have zukes out the wazoo this year. Neighbor/niece planted about 10 plants because her daughter, Sarah, age 6 (my great niece) loves zucchini better than anything.

with very little olive oil, but you could certainly bake them if you wanted. I dip them in egg, then coat with panko that has herbs and garlic mixed in. Fry them in maybe a teaspoon of olive oil in the ceramic pan. I do this very slowly, while I'm doing something else in the kitchen.

Yes, they are an excellent way to use your zucchini.

I have quite a few squash I'm starting, but I'm doing them for the blossoms. Can't figure out how to keep the plants at a reasonable size, though.
