What's for Dinner, Thurs., June 2, 2016

The RG is cooking and it's going to be chicken thighs (my new favorite cut), roasted asparagus, and watermelon salad with feta cheese, mint, capers, and something else I can't recall.

Dessert will be thin lemon cookies.

Tonight is Crock-Pot pork loin and veggies (red potatoes, red onion, carrots, celery, garlic), spiced with Penzey's Bavarian blend (crushed brown mustard, rosemary, garlic, thyme, bay leaf and sage) and whole wheat biscuits n butter.

That oughta take care of leftovers from the fridge. I did, however, make cornbread muffins to go with, today.

I think I might back off the carbs tomorrow, though.

On sale for only $3.99/lb. and the usual fried green pepper and onion. And a tasty Greek salad. What a great dinner. Oh, and a bit of the red.

2 shoulder lamb chops for $5.99 a pound.

Then I saw 2 identical shoulder lamb chops in an oven pan marinating in a teriyaki sauce for $3.99 a pound.

It fit into the toaster oven for an hour at 350 and came out melt in your mouth.
