I've been cooking for our summer staff all week. Tonight was pork loin. Google "Island Pork Tenderloin with salad" for the recipe. It's yummy. I don't make the salad but use the dressing to pour over the sliced loin to keep it moist for serving crowds. I probably won't post much the next few weeks but I will be reading and learning from all of you great cooks
