I'm having more of my chicken satay in peanut sauce, along with some onions and peppers, of which I will have to make more.
Also, I cut up two melons (one watermelon, one cantalope) for the week ahead, and hope to make the basics of cole slaw, so I can just put the dressing on when I'm making up something to take to work.
For breakfasts on-the-go, I've been making up these blender concoctions with all the wonderful fresh fruits and berries that are out now. They are like smoothies, but without the yogurt or milk. Instead of yogurt, I use watermelon! Yes, it makes for such a light drink. I squeeze my own fresh orange juice, and the one for tomorrow is blueberries, banana, orange juice, and watermelon. It's gorgeous! I have been keeping track of my fruit combos, and if I can find it, may make a separate thread on this.
Unfortunately university cafeterias are still serving up some of the most unhealthy food ever, so I have to take something every day. They do have a salad bar, but it's the most basic salad bar ever--nothing that would ever satisfy me.

(2,016 posts)with corn on the cob and baby red spuds. I'm skipping the sausage today (because I forgot to buy some!). The shrimp are head-on. After everything is done, I'll pour over the garlic/butter/sauce w/ extra seasonings on everything.
