What's for Dinner, Thurs., June 23, 2016

Rollatini (beef) in tomato sauce from the other day. Serving over pasta.

Glass of white wine, for sure.

Dessert is this new Haagen Daz flavor: sesame brickle, I think it's called.

No bacon, sadly. I was a bad boy in Phoenix, and ate my quota for the month. With lettuce, tomato and vadalia onion.

Leftover veggie-pasta salad, too. Also, maybe a cup of salad-in-a-jar (marinated mushrooms, olives and red peppers from various jars).

Chinese take-out, white cake (he even made sure the bakery spelled my name correctly. lol) and Edy's chocolate ice cream.

5. Cajun Chicken Salad

From a Dana Carpender low-carb cookbook; sprinkle Cajun seasoning on cutlets and cook in grill pan. Meanwhile, slice thinly a red pepper, a green papper, and red onion. Dress with olive oil, tarragon vinegar, mustard, and tarragon. I served over rice. I've also served it over chopped green salad.
