What's for Dinner, Tues., Nov. 1, 2016

Pork with garlic and rosemary, which I cooked a couple days ago.

Roasted Brussels sprouts with pancetta and yellow pepper.

Cucumber salad in cream sauce with red onion and dill.

My husband made it, and it turned out very nice.

I don't get to cook on weeknights (you guys know what I mean by "get to&quot because I am cooking at a group home for intellectually disabled young adults. I've never loved a job more than I love that job. But it makes me appreciate the nights I do get to cook for my family.

Anyway, my husband and son are happy to take over the weeknight cooking. They both decline, however, to do any meal planning. So I keep my hand in with that task - I can still search for recipes to try out, though I need to be sure they're not too complex.

This afternoon I was sure I'd need to write out my method for beef stew, but my husband had the task well in hand when I got home from my daytime job.

Moral of the story is, I guess, that cooking needn't be a horribly necessary daily chore, but a joy and a way to express your creativity and love.
