soooo.
i was kinda sick during most of my baking this year, and i feel like i wasnt thinking straight. lots of things went wrong, or just didnt get done.

but i tried something new that turned out delicious, but...

so the main cookie here is the klatchke, a recipe from and old german lady that was a friend of my mom's. they were the only cookie my mom made.
they are delicious but fussy.
anyway, the dough is basically half butter, half cream cheese, no sweetening.

i decided this year that this dough could be lighter, and maybe better, if i made it puff pastry style. so i saved half the butter and did just that.
they are super delish. light and airy and flaky and nom nom nom.

there is only one problem.
the cookies are shaped in a little pinwheel around a stewed apricot. getting those little suckers to stay closed, to not pop open in the oven, is the main annoyance w this cookie.
well, guess what all the little puff pastry did in the oven? you guessed it. 100% of them puffed up and popped open.

omg they are good tho. i didnt get the whole batch in the oven, and i am thinking i am just going to do a coffee cake type thing, or maybe a rolled up and sliced type of thing.
small bonus is that you dust them w powdered sugar, which gets absorbed within a day or so, and is not attractive. these dont seem to be sucking that sugar down. good thing.
