The recipe says it serves 6. Chill @ least 1 hr., overnight is tastier.
1 lg head cabbage, v. thinly sliced
1/2 C finely diced onion(I never made this w/ this small amount onion, I always used more.)
1 1/2 C good mayo, I use real Hellmans, not the low fat type
1/4 C apple cider vinegar
1/3 C white sugar, might need to tweak this
1teaspoon fresh ground black pepper.


I have been making this since I got the cookbook in 1995. I double it for potlucks and never take any home. Enjoy

We have it on a handout they used to give out (I'm talking like 25-30 years ago) but I couldn't find it quickly. This one online looks like it. Note that if you make it a day ahead, it gets pretty liquidy and might need extra cabbage.

...to any of the suggestions. Gives it zip. We are talking a teas. or two depending on the amount of slaw. I shred a little apple in mine, too, along with the apple cider vinegar and onion. Also a little red cabbage added with the green gives eye appeal.

Grate 2 heads of cabbage (I use a mandoline). Finely grate 2-3 carrots. Mix one bottle Hidden Valley Cole Slaw Dressing with 2 tsp. celery seeds, 1 T sugar, and just a little cider vinegar. and mix. Pour over cabbage and carrots and mix. Put into a disposable roasting pan and sprinkle some paprika over the top.

And no, there were no leftovers.

Adjusted to the right mix of sweet and sour, and no salt. Good spring cabbage is delicious and only needs a little help.

and my coleslaw is a favorite.

Colorful Coleslaw

At least one large head of green cabbage. If you want, add a red cabbage.
Two or three bell peppers, red, yellow, orange, and/or green bell.
1 decent sized carrot, grated.
2 sweet apples. Whatever kind you like.

Shred the cabbage. Cut up the peppers into small pieces. Peel and cut up the apples. Put all the above ingredients, properly shredded, grated, and cut, into the largest bowl you own. When I make this I use a large aluminum pan. Stir.
Do a few good grinds up pepper, probably a quarter to a half teaspoon. Sprinkle a similar amount of celery seed.

Mix again. Sniff. You want to be able to just smell the ground pepper and the celery seed.

Dressing:
1 cup half and half
1 cup mayonnaise. Use real mayonnaise, not Miracle Whip or whatever that nasty stuff is called. And not low fat. Yuck.
Sugar. Start with a quarter cup and add more if you want it sweeter.
2 Tablespoons vinegar, 2 tablespoons lemon juice.
Whisk the above ingredients together, taste and if it’s not sweet enough for you, add a bit more sugar.

Pour dressing over the dry ingredients, toss to coat, and refrigerate. This benefits from an overnight in the fridge.

The dressing recipe is really one of proportions: equal amounts half and half and mayonnaise, enough sugar for desired sweetness, lemon and vinegar for tartness.

Since I don’t own a food processor, I cut up the cabbage by hand, which is pretty tedious. Those of you with a processor will find this incredibly easy to do.

You can add raisins to this if you like.

This recipe can easily be scaled up or down as needed.

Them's fightin' words! In fact I had no idea MW wasn't mayonnaise until I went to college. I grew up in Massachusetts and we always had MW and called it mayonnaise. Then I went to college in California and on my first day I made a sandwich in the cafeteria and said "I think this mayonnaise has gone bad!" and the New Yorker next to me leaned over and said "It's not Miracle Whip."

Real mayonnaise is a bit sweet.

Oh, and don't even remotely think about the low-fat version or worse yet, some soy based thing.

Clearly you and I need to arm wrestle over this issue.

Sesame oil
Garlic
A spot of hot mustard
soy sauce
rice wine vinegar
Olive oil for sticking

I have no measurements only because I usually throw this together. You just want enough to coat the cabbage and carrots. To me it's the best cole slaw ever!
