SORRY nyt didn't include this one. I've used this one of theirs for years, it's a real favorite.

3 tablespoons olive oil
3 ½ pounds chicken pieces
Salt and freshly ground black pepper to taste
2 large bell peppers, cored and sliced into 1/4-inch pieces
1 large onion, thinly sliced
4 ounces lean slab bacon, rind removed and cut into 1/4-inch dice
1 leafy sprig of parsley, coarsely chopped
3 cloves of garlic, minced
2 pounds fresh or frozen sweet green peas

(12,051 posts)I actually hate cooking and am very resentful that my husband refuses to cook AND does very little around the house generally, but this meal was pretty easy and quick.
Since I am stuck doing most stuff, you can't imagine the things I've done to streamline absolutely everything so I am not constantly working at some hated chore. I've even refined down to the nub every process, ruthlessly thrown out new mops that aren't perfect, etc., just to lessen the hassle. This recipe was a keeper!
