What's for Dinner, Tues., Sept. 12, 2017

Big salad tonight using my very tasty cherry tomatoes from the garden, fresh corn, various herbs, and blue cheese. I'm putting this over chopped buttercrunch.

Maybe a little leftover Chinese later, if that's not enough.

1. faux Mexican Cottage Cheese

on a warmed tortilla, c. cheese, onions, Cilantro, cubed avocado, Salsa, squirt of lime, small sprinkle of Monterrey cheese, under the toaster oven broiler ~ 1 min. Also good for a bfast.

2. rabbit gumbo

first you make a roux...... 1 small onion, chopped
1 small green pepper, chopped
1/4 cup canola oil
1 dressed rabbit (about 3 pounds), cut into pieces
1/2 pound smoked sausage, halved and cut into 1/4-inch slices
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
1/2 cup sliced okra

...but I haven't been able to eat rabbit since we had a pet bunny 😞 I might try this with chicken though!

Do you simmer the rabbit first (to break down the stringiness), or just dump everything in at once?

And then coat it in flower and fry it like chicken and add it whole bone in . to make the roux use the pan you fried the rabbit in .

with a baguette for dunkin'. I like my extra spicy.

(Also called "sofrit", probably due to the garlic/onion/celery/bell peppers in the recipe.)

Curry had red and white sweet potatoes, tomatoes, okra, onions, chicken broth, and curry paste.
