Mozzarella

I'm referencing Polly-O, Gallbani, etc. (the one-pound brick).

What's going on? I used to be able to buy this cheese in December and it would be fine in March or even April. But for about a year, I've noticed that it's "use it or lose it," specifically after about eight weeks after purchase, it degenerates in the package. The plastic wrapping stretches and balloons out and the cheese is stale, smells off, and tastes off.

Anyone else with this experience? It's happened at least 4 times with me.

Can't image buying a mozzarella that will keep for 3 months. It should be soft and creamy and you should use it as soon as possible. Maybe the hard brick Kraft kind would keep longer, but who wants that?

Despite best efforts, I tend you use only 1/2 of the package after opening. And, after a month, green mold is abound. I tend to use mozz only on pizza, but for me there's only so much pizza can be made/eaten before the mozz goes bad.

So like Dem_in_Texas said, it should be used fresh.
