when I discovered braising in coconut milk.
chopped ginger
chopped garlic
(sauted)
Add Coconut milk
Chopped fresh tomato (1 large or several plum)
Splash of soy sauce or Worcestershire
Simmer for a good while.
Put chopped collards in a big pot and pour this over them. Cook until done.
Better than with meat and I'm southerner.
