I love eggs.
Hard or soft boiled, poached, fried or scrambled.
Recently bought a couple of silicone egg rings.
Just liked the look of perfectly round fried eggs.
I separate the yolk from the white.
Mix whatever strikes your fancy with the white.
I've used chili (no beans), sriracha, chopped caramelized onions, fried rice, herbs de Provence, etc.
Pour it in the ring and then top it with the yolk.
I do them sunny-side up, putting a glass pot lid over the egg until the whites are done and the yolk is still runny.
