What's for Dinner, Sun., Aug. 19, 2018

For Sunday dinner, we are having stuffed meatloaf, at my request. It's stuffed with spinach/garlic, hardboiled eggs, shitake mushrooms, and Cubanelle pepper.

Not sure what the accompaniments to this will be.

Tonight we're having clam soup.

2. I'm going to make my first batch of Chicken Cacciatore, today

I just finished bringing some tomatoes and peppers in from the garden. Still deciding on what kind of pasta to use.

I read a recipe to get a rough idea as to ingredients. No doubt this will be a 'taste and add' exercise.

My Mom used to put hard boiled eggs in meatloaf. Unfortunately, I make the worlds WORST meatloaf but I'm going to give it another try, this Autumn.

3. BLTs mac n cheese and a veggie

That sounds like some kind of great stuffed meatloaf

4. Sundays are usually pasta night

Tonight baked penne with mini-chicken meatballs, cesar salad and garlic bread. Fresh figs for dessert.

5. Just put the ribs in the smoker.

Pinto beans and potato salad for sides.

6. Chicken paprikash in the Instant Pot

over pasta leftover from last night, and a kohlrabi-fennel-apple slaw with a mustardy dressing

7. Italiano night

I cooked a batch of mild italian sausage. Hubby will get salad, spaghetti with sausage in tomato sauce, garlic bread, and I'll make myself a casserole with zucchini pasta, mushrooms, sausages, sauce and cheese.
