Steaks have been marinating in herbs and garlic since around 10 this a.m. Probably will be pan fried in a cast iron pan.
Potatoes. Not there's a shocker: we have been low-carb for so long. I don't know what possessed the RG! It's been at least a year since I've had a potato, I think.
Well, maybe we are breaking all rules because of the holidays?
I'm making oregano-lemon couscous salad. It has red onions, kalamata olives, toasted pine nuts, feta cheese, parsley, and raisins. I would like to put baby spinach leaves in it, but it was turning dark and I didn't want to venture through the garden under those conditions.
OK, now don't laugh at my dessert. It is turmeric ginger ice cream. It's a low-calorie type of ice cream. Correction: it's turmeric chai cinnamon light ice cream.

I've been in Florida for the past week and a half helping my dad recover from a bout of colitis. He's mended well so we're gonna feast tonight.
For an appetizer, we'll have shrimp cocktails. Why not? We're in the Gulf of Mexico!
After marinating the catfish filets in milk, I'll lightly coat them in flour then cover them with blackening peppers. They'll be pan-fried lightly. I found a nice zucchini that I'll slice and fry with some onions. This will all be served with yellow rice with a few frozen peas thrown in for color and textural contrast.
Yesterday was Dad's 87th birthday and we have a beautiful death-by-chocolate cake one of the neighbors brought over for dessert.
I'm heading back north tomorrow. I hear it's cold...

1?2 lb ground chorizo sausage
1?4 cup flour
2 cups whole milk, brought to a simmer
1 teaspoon paprika, if desired (optional)
salt, to taste
fresh ground pepper, to taste
DIRECTIONS
In a medium saucepan, heat milk over very low heat, stirring occasionally. Make sure to keep an eye on the milk, dont let it boil.
Meanwhile, in a large skillet, heat the butter/margarine over medium high heat until melted, then add sausage. Crumble and cook the sausage until well-browned and no longer pink.
Sprinkle flour over the sausage and cook, stirring, for a minute or two.
Add warm milk all at once and cook, stirring, until thickened and bubbly.
Turn heat all the way down, add paprika (if desired) and season well with salt and pepper, stirring and tasting frequently until the flavor is to your liking. Turn off the heat. Gravy will continue to thicken as it cools. Serve over warm biscuits.

(11,447 posts)Google page. I took the sausage out of the pan after I cooked it and added it back to the gravy just before it was at the desired thickness. My chorizo had plenty of salt. I left the paprika, salt out. My sausage did not render very much fat. I had no lard or bacon fat so I used butter for my roux. Heated my milk in the microwave and added it.
There is a small Mexican grocery store near by and they grind their own chorizo. I get it bulk. Look for a Mexican grocery if you can.
I went down this road because I was looking for ways to use up buttermilk.

(55,025 posts)Trader Joe's butternut squash soup, maybe some cottage cheese, crackers for those who want em. and a gross pineapple upside down cake from a mix that has been cluttering the cupboard of two different houses (I have trouble throwing food away). maybe some whipped cream to drown that thing.

(5,681 posts)Got that out to thaw and also two Angus beef hotdogs. I am having a open face chili dog on bread. Covered in grated cheddar and some mustard, too. 🤗
I made a salad of kale, broccoli, parsley and lettuce (all cut chiffonade). Toasted some raw almonds and chopped some dried cranberries and added those. The dressing is fresh lemon juice and zest, olive oil, honey and S&P.
German chocolate cake with coconut pecan icing for dessert later. My favorite cake.

(17,497 posts)It was a leftover that TJ made - turkey, pasta, carrots, broccoli and creamy sauce. I don't know the ingredients. It was tasty and filling. Mandarin oranges and a decaf green tea after.
FLFC has been ill. He had teeth removed two + weeks ago, then tweaked his neck, and then had a digestive upset. He seems to be recovering nicely as of today, fingers crossed.
He accepted his nasty tasting medicine tonight with less than enthusiasm, followed by a Solo cup of water (a bowl isn't good enough anymore). He then had several beef cat treats as an appetizer to his meal of fresh ground beef, yogurt (probiotics) and cottage cheese. After dinner he had an "outside" instead of fake bacon treats and investigated fallen leaves but there were just too many.
