What's for Dinner, Sat., Jan. 19, 2019

Pappardella with sauce made of garlic, olive oil, red peppers, and sausage. Crema Mexicana added at the end. The RG made the sauce and I, of course, made the salad which is baby arugula, parmesan shaved on the mandoline, toasted pignolis, and cherry tomatoes. I will make the dressing using olive oil, crushed garlic, a little lemon and vinegar. S & P of course.

I spied some chocolate bars on the kitchen counter, so I am surmising that is dessert.



on edit: bread pudding with some of the chocolate melted on top.

Chicken Parmesan with spaghetti and a Caesar salad with fresh bread and butter.

Slices of fresh fruit for dessert.

the breading was simply bread crumbs mixed w/ ranch dressing mix (powder)

Scalloped potatoes ( I’m trying to replicate the potatoes I had at the Hyde Park Grille in downtown Cleveland last month)

Cleveland Crisp salad (hydroponically grown lettuce that is grown in Cleveland, Ohio, and is indeed true to is name)

I have some cake rolls in the freezer to pull out for dessert ... (pumpkin and chocolate)


Chardonnay wine to go with!

and blueberry galette for dessert. I rendered the beef trimmings and got about a tablespoon of fat that I browned the beef in. Unhealthy it may be, but it's a serious flavor enhancer if your ldl and hdl can stand it. I also added a few pepper flakes for interest. Props to elleng for the galette recipe. I've made it at least 20 times since she posted the link. It's the best addition to my repertoire in the last 10 years.

I found a recipe for Thai chicken salad -- lots of veggies and except for honey in the dressing (for which i subbed Splenda). The dressing tasted awful, so we just used bottled dressing. Salad was okay.

Local store had marinated pork on sale and ready to rock. I had everything else. Made homemade salsa too that will marinade overnight and then i will put it in some avacados tomorrow for guac. Gonna be a great AFC Championship game tomorrow!

Seared Steak with red wine rosemary shallot pan sauce, roasted green beans and sliced almonds, and horseradish mashed potatoes. it was fantastic.

I took an exceptionally large breast and sliced it into three filets. I marinated them for a while in chicken broth. Then I spread some mozzarella, parmesan, dried parsley and pepper on each and rolled them up and baked them. Turned out pretty tasty. I served them with linguini + homemade pomodoro sauce.
