What's for Dinner, Mon., Feb. 25, 2019

The RG had an idea for a lacinato (Tuscan) kale and egg casserole with a crust. So I guess that's a pie? It has cheese on top of the crust, though. Oh and it has applewood smoked bacon in it, also.

Tossed green salad with a real variety--radicchio, ruffly lettuce, Boston, endive, spinach, mache--with chopped fennel and cucumber.

Dessert: nut-fig cakes with a little vanilla ice cream.

they were marinated in McCormick Burbon & brown sugar marinade and are being roasted in the oven.

I had a late business lunch at a sushi restaurant and there were many, many courses of deliciousness.

Yesterday, my son and I went to a fantastic Cajun barbecue joint in Mineola, NY called "Biscuits & Barbeque." Fantastic joint! Great food, old-fashioned Southern atmosphere (the building is like an old train car) and the service was excellent. I had pan-seared catfish with cole slaw (no mayo, thankfully) and a rice/black bean combo. The kid had ribs 'n' chicken and mac & cheese. For desert we split a peach/blueberry cobbler and it was the perfect ending. The place is a tad pricey and they don't have a liquor license but you may bring your own.

Cheese & vegan crimbles english muffin pizzas. And the usual decafe tea. I did a fair bit of closet cleaning today, this is fast & easy.

I had mine cooled on a tossed salad with homemade ranch dressing, but there was rice and some leftover vegetables as well, if anybody wanted it that way.

salad was romaine, a bit of green and purple cabbage, cuke, cherub tomato, onion, carrot, radish, and red bell pepper

Made granola Saturday. Having that as dessert/munchie probably.
