What's for Dinner, Sat., May 11, 2019



Starting at the top and going clockwise, radicchio stuffed with chopped vegetables like cucumber, zucchini, red onion, tomato in vinaigrette.

A crunchy toast on which to put cheese and roasted pepper. At the 5 o'clock spot is shredded carrot salad with corn and shredded red cabbage; a dressing on this one, too.

Roasted peppers.

On the upper left is watercress in artichoke dressing. Bits of artichoke sprinkled over.

In the middle is a bed of toscano (AKA lacinato, kale). On top, parmesan slices.

On the side is pasta with ground pork in cream sauce. The RG ground his own pork using some choice boneless pork from the WF.

No dessert, wah. But the rest of the meal:

1. I'm making scalloped potatoes and ham once again.

Still using the ham from the one I baked in February.

This really is one of my favorite meals. The only drawback is that it is almost the only thing that's not better the second or third day, although it is acceptable. And I'll be eating this for three or four days. The down side of living alone.

2. Chicken fried rice

I forgot to marinate the chix thighs I defrosted this morning, hopefully just an hour in some sesame oil, soy, and garlic will be enough to flavor them up. Poked them all over with a fork to help speed it along.
