Mom and Dad had homemade beef stew, tossed garden salad and garlic bread.

(4,588 posts)the usual with lemon juice, butter, and cornflake crumbs. Potatoes and steamed broccoli with garlic. Might dice some tomato to toss on top of the broccoli.
Since the frozen cod I usually buy went up in price, I got some fresh but packaged cod from the store meat counter a couple weeks ago. I ate one piece that night and froze the other two pieces. I'm not impressed with the freshness. It has a strong fish odor- I had forgotten and it about knocked me over when I unsealed the newly defrosted piece tonight. The fish tastes fine, but I'm going back to the frozen. It smells only of salt water.

(15,088 posts)Did you know leftover mac and cheese can be fried? Just cut it into slices and brown it in butter in a nonstick pan. Decadent.

(35,620 posts)Trader Joe's has a mac 'n cheese frozen snack that's already fried and you just put it in the oven for warming. It's good--but far too expensive for what you're getting.
Also many restaurants feature this as an appetizer. Again, though, because it is very popular, it is pricey.
Your approach is better.

(55,003 posts)came out pretty good. chicken breast, onion, garlic, red bell pepper, jalapenos, a diced sweet potato, can of corn, can of black beans, can of diced tomato, the juice of another can of tomatoes that was drained and saved, can of el pato, a quart of stock, salt pepper, dried oregano, and a pile of chopped parsley and cilantro.
