Related: About this forumApple beet carrot slaw recipe
This week's recipe is a simple and delicious summery slaw. The sweetness of apple mixes with the tartness of lemon juice, and the amazing crunch of the raw beets. This recipe is also completely vegan and gluten free. If you don't have a mandonlin, you can run all of the veggies for this recipe through the large holes of a box grater. The texture won't be quite as refined, but the taste will still be amazing.
Of course you can customize this with your favourite type of apple. We were using Honeycrisp, but most apple varieties will work just fine. Granny Smith might be something to avoid because they are so tart (really better for baking!) but Fuji, Royal Gala, Pink Lady, whatever you prefer. You can also control the tartness with the amount of lemon juice you add. If you find it a little too astringent, cut the lemon juice back a bit. We love that tartness mixed with the sweet apple and beet.

(3,280 posts)If you've got one of those disks that has the shredding holes, that would work, too. Again, you'd probably want to use the large holes, and of course you'd want to cut the core out of the apple before you toss it in to a food processor.

I just make mine with match stick sliced apples, celery, onion, red bell pepper, carrot, with an apple cider vinaigrette. Almost always have these ingredients.
Goes great on a pulled pork sandwich, and as a side salad with any other grilled meat.

(3,280 posts)The tartness and acid really cuts the unctuousness of a juicy burger or grilled steak.

(15,088 posts)I dont even like beets and it looks good to me. Can I make it a day ahead?
Saviolo
(3,280 posts)Because it's pretty acidic, it holds in the fridge very well for a week or two. Definitely one you can make in a big batch and portion out as the week goes on.

(15,088 posts)Ill let you know how it goes over. In spite of your recommendation, Im going to use a Granny Smith apple because I happened to have one already.
Though you may want to cut down the lemon juice just a hair, since the apple will be so tart.

(15,088 posts)Not too sour and the salad has nice little pops of green.

Saviolo
