What's for Dinner, Thurs., Oct. 3, 2019

The salad I'm making tonight is called "wilted romaine with cashews." It has olive oil, garlic, soy, sesame oil, and a little Tabasco. The romaine leaves are blanched and then the dressing is poured over. Sprinkle cilantro and the cashews over the top.

The RG is back and I think he's making crab cakes. Either that or crab stuffed mushrooms.

Not sure about dessert. It will probably be something he picks up at Whole Foods which will likely be carrot cake.

of the GM strike so we don't have to look for work. I had a cheeseburger...Giant Eagle has good meat on sale. I had fresh corn. I went to the produce store today...they had giant zucchini squash for 99 cents...I thought it might have just grown too much, but it is actually a big squash...four pounds at least maybe more. I cooked half of one tonight with the burger for my daughter and me. with a little oil and garlic. It is probably the best squash I ever tasted. It is grown here in Ohio...never heard of it before. I bought three...going to get more. I love squash...zucchini bread, morning glory muffin, zucchini bars, zucchini parm/lasagna,stuffed zucchini.

I make all those items--zucchini breads, the morning glory muffin, and I love stuffed zucchini, too. But my number one fave thing to do with zucchini is make zucchini fritters.

People make jokes about how prolific zucchini is, but I only wish I had that problem. In NJ, because of our humid, hot climate in July and August, the plants always come down with powdery mildew. If you're organic, there's not much of a solution for it. I have friends in parts of the country where it's more of a dry heat and they don't have that problem.

Anyway, I know you'll have fun cooking up all that zucchini. Here's a fave zucchini fritter recipe:

I have been told by my brother in law...to wrap the stalks in aluminum foil next years...I am going to try it. I have also been told it is about the bees so may get one of those fertilization kits. I am going to try the recipe you were so kind to provide and have saved it. I have tried some of your things before with great success.

I think next time I’ll just add more veggies and beans. The fake beef didn’t stand up to simmering and it was schmooshy and runnier.
