What's for Dinner, Fri., Oct. 4, 2019

Posting early due to working late.

Crab-stuffed mushrooms for an appetizer.

Polenta with Italian sausages and homemade tomato sauce.

Dessert: apple pie and ice cream. Cold cider if it's warm tonight, hot if it cools off.

1. Bacon Cheeseburger Soup

2 strips chopped bacon, reserve the rendered fat
1/3 pound or so 93% ground beef, browned, throw away the grease

I return bacon fat to saucepan, add a little olive oil, and cook some chopped red onion, chopped garlic and a chopped serano pepper. Add some quartered cherry tomatoes. Chop 3-4 pickle slices and add that to the pot with a little pickle juice. Return beef and bacon to pot. Pour in one can Campbell's Hearty Cheeseburger Soup, a little yellow mustard, and add beef stock as needed.

When it's nice and hot, stir in some extra cheese. Since it's just me tonight, I'm using plenty of Cabot Vermont Habanero Jack shredded cheese, and then topping it with finely shredded lettuce.

2. stuffed zucchini

my sister gave me a zucchini the size of Rhode Island. I stuffed it w/ rice, ham, eggplant, red bell pepper, onions, garlic and black olives.

I kept half of it for us here, and took the other one over to my dad and sis.

We're going to have some sliced tomatoes too.

Peach cobbler for dessert.

Steamed then sautéed fresh snapper. It sits on a bed of pan sautéed mushrooms and onions. To the right and left are a bit of avocado puree and hot tomato salsa.
