Chicken and eggplant parmesan.

Baby arugula salad.

Panko-crusted okra with spicy sauce.

Dessert: sliver of pecan pie.

Berry nirvana kombucha. I put it in a wine glass and pretend it's wine.

1. At our house

Chili-Orange salmon, soba noodles with sesame-ginger sauce, stir fry garlic green beans.

2. Hubby is making spaghetti sauce today

So we’ll have that on top of some penne and also a green salad.

He said he got some red wine the other day. Chianti, probably.

3. Meatless Monday

The last cup of the breakfast soup from earlier, and a new to me vegan burger-Quorn.

4. Eggplant Parmesan (meatless)

Picked up some great eggplants from the farmer's market.

How did you prepare the eggplant, before putting in this pan?

9. Quite easy

I did the egg wash, flour (added salt and pepper), egg wash, panko bread crumb routine.

Then pan-fried in olive oil

Put some pasta sauce in bottom of dish, placed eggplant in dish and topped with mozzarella


And I baked them in my new toy, an AirFryer/Toaster Oven (Cuisinart)
