This cooler weather has me ion the mood for beans, chili and soup. I made a big pot of gumbo and copycat Olive Garden zuppa the other day to put in the freezer. There's nothing like a bowl of hot soup on a chilly day.

in the bag; so many varieties we should make a mnemonic to remember all of them: Northern, Pinto, Large Lima, Yelloweye, Garbanzo, Baby Lima, Green Split pea, Kidney, Cranberry, small white, Pink, Small Red, Yellow Split pea, Lentil Navy, White Kidney, Black Bean - colorful!

10. I made a lentil soup the other day that was outstanding

Carrots, onions garlic, turmeric, coriander, black pepper and cumin
sauteed in olive oil.

Add 2 large boxes of chicken broth and 2 cups of red lentils. Cook until lentils are done and then add 2 cups of fresh baby spinach.

Squeeze two lemons and pour in the juice.

Delicious

Here you go: Guided by recipe on back of bag https://hurstbeans.com/products?query=&categories=&page=1

1 bag Cajun 15-bean soup - soaked overnight
6 cups of organic beef broth
1 can of diced organic tomatos (20 oz family size can) and a few leftover fresh ones from the garden diced up

One large sweet onion chopped
3 cloves of garlic minced
1 Hillshire Farms Kielbasi sliced/chopped into bite-size pieces

1/4 c - lemon juice
I added about 3 T. of Laurelville non-pasturized apple cider that unfortunately had just started to vinegarize a tiny bit
1/2 t - cajun spices to your taste (sweet smoked paprika/chili powder
I added a goodly sprinkle of Penzey's Mural of Flavor
Himalayan salt to taste and Tellicherry freshly ground pepper

Drain those soaked beans; add beef broth and diced tomatos - bring to boil, turn down to simmer for 1-1/2 hours
Have prepared the chopped onion, minced garlic, and kielbasi - saute together and add to bean broth w/lemon, cider, and
w/spices- simmer again for 30 min and cool off enough to be eatable. Makes a huge (bigger than Dutch Oven) pot of soup -
12 to 16 servings.

Serve with cornbread muffins or crusty bread and butter

started in 1989 and now grown to selling their nourishing products in 1,000 stores around the nation. Can't beat their great 12-bean bags for soup, chilis, baking goods, coffees, teas etc. It is a 501 C3 whose mission is to change women's lives who are chronically unemployed to be self sufficient and break the cycle of poverty for families. If you are interested go on line at Women's Bean Project to order or see if they are being sold at a store near you. Each bag of beans has a note from the woman who did the work.
