What's for Dinner, Thurs., Nov. 7, 2019

Appetizer: asparagus spears dipped in ranch dressing

Roast beef stew with rutabaga, parsnip, carrot, potatoes, and celeriac. Two types of bread to choose from--cheese balls or cornbread with cheddar and peppers in it.

Dessert: peach lattice pie with vanilla gelatto

Cool, overcast day here so I'm really happy to have something like a stew this evening.

But I am going to make a "quick" chicken pot pie by putting the veggies, chicken and sauce/gravy (cream of celery soup in this case) in a pan, stirring up some homemade buttermilk biscuits and putting them on top and baking it. I cooked the chicken, carrots and potatoes in my Instant Pot before going to work this morning. Caramelizing onions won't take very long, and peas, corn, and other small additions are frozen.

nothing special about them: onion, pickles and choice of condiments

tomato slices

French fries



There's still ice cream (amazingly so!) if I'm looking for dessert, but I may opt for a cup of hot chocolate during the football game.
