What's for Dinner, Sun., Nov. 10, 2019

This will be an end-of-the garden season meal:

--stir fry baby kale. Using sesame oil.
--fried green tomatoes topped with goat cheese. The goat cheese has herbs blended in.
--pork chops and sausage in spicy tomato sauce.

For dessert, gelato--either caramel sea salt or butter pecan.

Made the stew with lots of "uglies" (root veggies - celery root, rutabaga) carrots, potato, celery, onion.

Bay leaf, thyme, garlic, smoked paprika, red wine.

And - OH! Look at that! - there's some of that nice merlot left in the bottle after using some of it in the stew. Hmmm. What shall we do with that?

Roasted chicken.

rosemary/garlic roast potatoes
buttered beets
niblet corn

Before going into the oven, the bird marinated for 24 hours in pinot grigio, olive oil, lemon juice, rosemary, garlic, onions and bell pepper.

In the oven it cooked w/ the garlic, bell pepper and onions in its cavity, more rosemary, as well as half a lemon.

Pork Chops finished in 400 degree oven for 25 minutes, served with cannelloni beans sauteed in my Le Creuset 6 qt wide/round dutch oven with onions, bacon and then added chicken stock...cooked down, added fresh baby spinach, then the pork chops into wide dutch oven/stove top...let " marry" for 30 minutes/ heat off....then grab some crusty bread, butter, glass of white wine...

Dinner....easy...

Ohhh prepped the Pork chops in a sugar/salt water with garlic brine...6 hours...
