Got a turkey breast for .39/lb

I stopped in Krogers yesterday, mainly to get cat food. They were getting rid of their fresh turkeys breasts and I got the last one. I roasted it as soon as I got home. My late dinner was turkey and roasted Italian green beans.

Today for lunch, I had salad topped with sun-dried tomatoes, Monterrey cheese and turkey. I made cheesy broccoli soup Sat and heated some up for dinner, and put some turkey in.

I won't have to cook all week.

I've been on a low-carb diet since Oct 1. I thought turkey would be a nice change from chicken. And it'll be nice not to cook for a few days. Hope you can get some leftovers set up I missed having them

Since September and I feel great! OK. I will admit to having a slice of pumpkin pie on thanksgiving, but no more toast in the morning. It's probably good that I'm a serious salad fiend. I even have salad for breakfast with an egg on top! I've lost about 15 pounds not eating carbs too. I'm a bit of a sugar-aholic, so some of this has been tricky. I found some nice sugar free peppermint hard candies that seem to do the trick.

For me, it seems easier to stick to low carb when I'm doing it to lower blood sugar. I've lost 17 lbs and got my fbg down to an acceptable level since I buckled down. I feel like I can keep it going. Your meals sound good. I've been eating a lot of salad lately.

So I usually buy a turkey the week before the day while they are on sale cheap, throw it in the freezer and fix it for us later. With just two of us, we carve up the turkey and package a dinner or two worth of meat to have later.

This week, I have a 1 pound turkey that will be thawed out and cooked probably Sunday. It should give us turkey dinners and casserole for three or four months!

Then as time passes and there is a bit of freezer burn or no slices, just slivers, I make casseroles or something with a sauce.

Also, after I clean most of the meat off the bones, I make turkey stock and freeze for future use.

I'm thinking I might want to spatchcock the turkey - it will cook faster and more evenly so none of the meat will dry out. It depends on if I can cut through the bones along the backbone - or get my husband to do it.
