Cooking & Baking
Related: About this forumMy daughter got me a Spiralizer for Christmas
I set it up and made zucchini noodles today. I can't believe how long some of the noodles were. I used them to make low-carb chicken Parmesan. Really hit the spot. I've been eating a lot of grilled buffalo chicken chunks and roasted cauliflower. lol
The Spiralizer is easy to use, and I'm looking forward to running other low-carb veggies thru the blades. Maybe I will make sweet potato chips and bake them.
If anyone else has some ideas on veggies and recipes, I'd love to hear.

(17,047 posts)over the zoodles (I learned a new word!) and letting the heat from the sauce soften them. I think that's how I had them at my freind's house. She had gotten zoodle nests from the deli. I put some grated cheese on top and let it melt. I think for the leftovers, I'll reheat the sauce, put it on the noodles and eat it all right away.

(17,047 posts)I want to remain on a low-carb diet, but I'll keep thinking of ways to use it. I don't want it to be one of those gadgets I use once and put away. I really like chicken Parmesan, so it'll be out to make zoodles for that

(17,047 posts)I put the coarse zoodles in a flat bowl and microwaved them on defrost for a few seconds, then stirred them and zapped them again for a few seconds, so they were warm but not cooked. I heated some of the chicken and sauce in a different bowl, then put them together. The zucchini noodles were crisp and warm, so I think I found a good way to warm them gently, without making mush. I am meeting up with some friends for dinner, but will continue my experiments tomorrow.
