What's for Dinner, Wed., Jan. 8, 2019

I'm going to make a summer-type meal tonight: ham sandwich or roll-up and potato salad. I'm going to put Swiss cheese, tomato, and lettuce on the sandwich.

The potato salad doesn't have potatoes, though. It's made by substituting cauliflower. First time I've tried this.

I'd like to have BBQ beans, too, but we don't have any. I guess if I was extra energetic I could pressure cook some but the salad is going to be enough for me to make tonight.

OhioGal, meant to tell you that on the sheet pan recipe using kabocha and Brussels sprouts, the recipe recommended to roast on separate sheet pans. I wanted to do it all on one pan, though, so I just cut the Brussels sprouts into 4 pieces. The smaller size made them all cook through at the same rate.

Kobocha is just as hard to cut as butternut, but I've watched the RG do it and it's not bad doing it his way. Just cut it into manageable parts and then cut the skin off with a knife. Even if you do take a little more of the squash off than you would with a peeler, it's worth it for the extra ease.

We're in the Catskills and there have been snow flurries all day. It's lovely!

The Landlady(!) decided to spend the day in the kitchen and she baked a couple of quiches before tackling the dinner.

Homemade Lasagna

We bought fresh pasta from a local restaurant which has a small store where they sell many of their foods. She made the tomato/mushroom sauce from scratch.

PRO TIP I DISCOVERED: If you cut open both ends of a can of tomato paste, you can push one end to the other to get all of the paste out of the can. It's easier than spooning it out!

She added fresh parsley, thyme and oregano from her winter garden.

When layering the pan, she added two eggs to the Ricotto cheese and also used mozzarella cheese. I once heard that it's lasagna if there are at least two layers and this puppy has four.

My contribution will be a mixed green salad with red leaf lettuce, red onion, cucumber slices, raisins, almond slivers topped with a honey Dijon dressing. I'll have to make a loaf of garlic bread, too.

Great comfort food for a winter's night in the mountain forrest.

I guess it's a riff on red beans and rice.

Rice cooked in beef broth, w/ Italian sausage, onions, celery, yellow bell pepper, garlic, tomatoes, kidney beans and spices (chili powder, cumin, a pinch of cayenne pepper, and liquid heat). I had a couple of handfuls of frozen chopped kale that I threw in just to use it up.

I was trying to stretch the package of Italian sausage into another meal, as we're pinching pennies. Al said it's good, so mission accomplished. (Thank goodness. If the experiment had missed, I would have felt bad about wasting the food.)


On Edit: Dad & Sis had grilled kielbasa, home fries, and steamed carrots & broccoli.


The rice dish WAS good, and there's a lot left for lunches or another dinner later this week.

I’d love to try that dish....I’ve had pumpkin pie made with a Kobocha pumpkin and really loved it.

Tonight I am using two crock pots! The larger one contains Spinach Lasagna and the smaller one, well, the insert, I used to make more Artisan bread.

Tossed salads with greens, red onion, and tomatoes.

Yasso bars for the guys.
