What's for Dinner, Fri., Jan. 10, 2019

The RG made a couple different types of vegetable sandwiches. One is roasted red and yellow peppers with a poached egg over it.

The other is a mixture of chopped vegetables with a tiny bit of anchovy mixed in: zucchini, garlic, chopped peppers, onion, basil, sage, and thyme, and pecans. A little bit of pancetta for flavor, which is taken out when the sandwich is served.

Both served hot. To go with it, an original salad, too (he hasn't cooked in weeks while he was abroad. I think he missed his kitchen). The salad has the most interesting colored sliced radishes around it. In the middle is apple, Swiss cheese, and some other vegetables.

Dessert is something I picked up at TJs, kunefe. I've not tried it, so I'll have to post back on that.
All I can say is that it's a baked dessert and it has what looks like very thin pasta in swirls on the top.

organic radishes. I made ranch to go with it. We are back on the WW wagon. So everything was pretty light. For dessert I made a 321 cake...it is a take on a weight watcher recipe where you mix angel food cake mix and regular cake mix and then use 3 tablespoons of cake mix, two tablespoons of water and you microwave it 1 minute... 321 I used gluten free cake mix but no angel food cake mix which makes it more caloric...but still pretty light. I put organic strawberry jam, fresh berries and light whipped cream on it...was really good and easy and no cake sitting around to pick at. I had a cappuccino also.

I’m visiting my father and he wanted to get out of his assisted-living place. He picked Applebee’s. I had the BBQ ribs. He had the blackened salmon.

Applebee’s is not my favorite but Dad was happy.
