What to make with nut pie crusts?

I scored a bunch of nut pie crusts on clearance after the holidays - 4 walnut and 4 pecan. At $1.25 each, I couldn't resist! They should last for a while in the freezer, so I will be able to use them over a few months.

I have several desserts that would be great in them, but the labels mention "savory" pies, too. When I looked on the company's website, all the savory recipes were various quiches. This past week I got some feta cheese and goat cheese, so I was looking at what I could make with them, maybe in a nut pie shell.

I found this recipe, which uses both feta and chevre (isn't that goat cheese?):

They use a standard pie crust, but I wonder how it would taste in a nut crust? I suspect it would be great in a walnut crust - what do you all think?

My wife made a pecan nut crust with some fresh pecans , then used a keto recipe for the filling with some strawberries , whipping cream , and cream cheese and used vanillia, and butter and cinnamon, and it was so good. So there's many things you can use , and I bet it'll be great tasting.

Google 'Bastila'. With the spices they use, it would be incredible.

Right now I am interested in trying something like a quiche in one of the crusts but I do have eight of the nut crusts to use up.

The sweet suggestions also sound great, but I am on a diet and need to cut back on sweets. My original thought was to try a Southern chess pie in a pecan crust. I think the simplicity of the custard would complement the nut crust nicely.

Classic Chess Pie
Ingredients
Pie Crust

1/2 (15-ounce) package refrigerated pie crusts
pie weights or dried beansaluminum foil

Chess Pie

2 cups sugar
2 tablespoons cornmeal
1 tablespoon flour
1/4 teaspoon salt
1/2 cup butter or margarine, melted
1/4 cup milk
1 tablespoon white vinegar
1/2 teaspoon vanilla extract
4 large eggs, lightly beaten
Powdered sugar, for garnish

How to Make It
Step 1
Bake Pie Crust: Fit piecrust in a 9-inch pie plate according to package directions; fold edges under, and crimp. Line pastry with aluminum foil. Fill with dried beans or pie weights and bake at 425° for 4 to 5 minutes. Remove weights and foil; bake 2 more minutes or until golden. Cool.

Step 2
Make Pie: Stir together sugar, cornmeal, flour, salt, melted butter, milk, white vinegar, and vanilla extract until blended. Add eggs, and stir well before pouring into piecrust.

Step 3
Bake at 350° for 50 to 55 minutes, shielding edges with aluminum foil after 10 minutes to prevent excessive browning. Cool completely on a wire rack. If desired, garnish with powdered sugar.

Chef's Notes
Variation:
Coconut Chess Pie: Prepare filling as directed above; stir in 1 cup toasted flaked coconut before pouring into piecrust. Bake as directed above.

I make a savory Shepard's pie.

Ground meat cooked with whatever you like.

Pie filling:
I sauté onions, baby sweet peppers, salt & pepper, cinnamon, nutmeg, I sprinkle flour on the top of the mixture stirring to combine add ground meat and milk to make a creamy filling. I use quorn meatless crumbles for mine.

For the topping:
Boil potatoes until tender. Mash with butter and a dash of milk salt & pepper to taste. Add to the top of the meat filled pie and bake for a few minutes.

Very good. Now I'm ready to make one 😋

Though I am not fond of mashed potatoes in general, making them sort of lumpy with some cheese is always good.

Yeah, I only like mashed potatoes if they aren't whipped. I like mine lumpy as well. Golden Yukons add a nice flavor and texture. They aren't a potato that can be whipped into glue.
