What's for Dinner, Sun., Jan. 26, 2019

Chicken with hot pepper jelly sauce. Cilantro over the top.

Couscous with toasted pignoli nuts.

Eggplant, cubed, with garlic and herbs.

Dessert: small serving of hazelnut chip gelato.

Chicken and shrimp fajitas with onions, red and green peppers and garlic.

Yellow rice and refried beans. Salsa, of course.

Fresh fruit for dessert.

It's already 5 pm and I haven't started anything, and neither of us is particularly hungry. I had a very satisfying lunch.

and mac and cheese. I’ve been at work all day and everyone has been ordering the fried shrimp for some reason. They looked so good I couldn’t resist! And they were delicious.

For dessert: a tapioca pudding cup I brought from home. Yum.

in a sauce with coconut milk and gochujang sauce, with rice and broccoli. Fairly spicy and ginger-forward, but tasty.
